Of course, me and Ty are picky, so I don't put the mushrooms or the red peppers in it and it is so delicious.  Also, I don't add the salt because with all of the chicken broth it has a good flavor.  It makes a lot of food.  So, I put it in 2 8 X 8 dishes and put one in the freezer for a later date. &lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;-10 oz. egg noodles (pre-cooked approx 8-10 min.)&lt;br /&gt;-4 ½ c. (pre-boiled) diced chicken breast meat&lt;br /&gt;-1 square butter (1/2 c.)&lt;br /&gt;-½ c. flour&lt;br /&gt;-1 ½ c. half &amp;amp; half&lt;br /&gt;-4 ½ c. chicken stock&lt;br /&gt;-1 ½ t. salt&lt;br /&gt;-1 ½ t pepper&lt;br /&gt;-2 c. sliced fresh mushrooms&lt;br /&gt;-½ c. diced red pepper&lt;br /&gt;-1 ½ c. grated parmesan cheese&lt;br /&gt;-1 ½ c. grated mozzarella cheese&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Preparation:Pre-cook noodles and set aside. Pre-cook chicken breasts, dice and set aside.&lt;br /&gt;In large saucepan or large fry pan melt butter, whisk in flour until smooth, add chicken stock, half &amp;amp; half, salt &amp;amp; pepper. Pour sauce into baking dish, stir in 1/4 c parmesan (4 tbs.) Add chicken, turn and coat both sides with sauce. Cover w/ foil. Bake 30 min. With a side of corn and rolls.&lt;br /&gt;We love it over the noodles. But either one is great.
